I was first introduced to Eggs A’la Golden Rod by my husband.


His family has a tradition of making Eggs A’la Golden Rod for special occasions like Easter. I am pretty particular when it comes to dishes with eggs in them, but I have to say that the moment I first tasted this simple dish I totally fell in love! Every time my husband makes this for me I find myself going back for seconds and thirds.


2 Cups of (Boiled and Diced) Egg Whites

1 1/2 – 2 Cups of Milk

1/4 Cup Butter

1/4 Cup Flour

Egg Yolks


(S&P to taste)



 To make the sauce first boil eggs. (enough to make 2 cups of diced Egg Whites).Peel the eggs and set aside the egg yolks in a bowl. Then dice up the egg whites.


Next heat the butter in a sauce pan over low heat until melted. Blend in flour. Cook on low heat stirring consistently until smooth and bubbly. Remove from heat. Stir in milk and diced egg whites.


To Serve:

Spoon over Toast and then sprinkle egg yolks over the top. Salt and Pepper to Taste.
