I have been asked to share the recipe for the quick and easy Avocado dip I made and posted about earlier today.
Right now I have found myself on an avocado kick. I recently discovered how yummy this fruit is. You have to understand, I grew up in a home where Avocado’s were a dirty word. Guacamole was referred to by my dad as yuckamole.
I had no idea what I was missing out on. I have only ever had avocado’s in one dish (which come to think about I love) which was a bean dip that had avocados, tomatoes, varios kinds of beans, corn and Italian dressing. It wasn’t until recently that (as an almost 33-year-old adult) I finally broke down and tried some guacamole at a friend’s home and absolutely LOVED it!
Then the other day my little sister showed me how to make this quick and easy avocado dip which I enjoyed sooo much I had to go and get the ingredients to make some more for myself. Here is the simple recipe.
2 Medium Sized Avocados
1 1/2 Large Roma Tomatoes
1/2 a Small Onion
Salt (to taste)
Cut the avocados in half. Remove the seed and scoop the fruit out of the skin with a spoon. Then dice up and put in a bowl.
Dice up the tomatoes and add to the bowl with the avocados.
Dice up into small pieces the onion and mix well with the tomato and avocado.
Finally, salt to taste. I prefer to use freshly ground Himalayan Pink Salt because it is soo incredibly good for your body and tastes great too.,
Mix well and serve with chips!
I have found this to be a flavorful yet healthy snack that makes for the perfect pick me up in the middle of the day.
