Ebleskiver Traditional Recipe
Ebleskivers are delightful, bite-sized Danish pancakes that are as fun to eat as they are to make! Made with a simple batter of eggs, buttermilk, and a hint of nutmeg, they’re crispy on the outside and tender on the inside. Ingredients
- 6 eggs (separated)
- ½ teaspoon salt
- 1 ½ teaspoon baking powder
- ¼ cup sugar
- 1 teaspoon baking soda
- ¼ teaspoon nutmeg
- 2 cups buttermilk
- 2 cups flour
Instructions
Prepare the Batter:
- In a clean bowl, beat egg whites with sugar until stiff peaks form. Set aside.

Heat the Pan:
- Heat an Ebleskiver pan over medium heat. Add a small amount of butter (or spray with oil) into each indentation of the pan. **I find I get better results with cooking spray than with butter. **
Cook the Ebleskivers:
- Fill each hole about ¾ full with batter. Cook until the edges start to brown.
- Using a fork or small spoon, carefully flip each Ebleskiver to cook the other side. Cook until golden brown and cooked through.
Serve and Enjoy:
- Dust the warm Ebleskivers with powdered sugar and serve with syrup for dipping. Alternatively, you can fill them with jam or enjoy them plain—they’re delicious any way you serve them!
