Easy & Delicious Lemon Cheesecake Bars!

If you love Lemon and Cheesecake, then you will simply adore these Lemon Cheesecake Bars!

Lemon Cheesecake bars are one of my favorite go-to desserts to bring to parties. I even had them at my own wedding reception (to give you an idea of how much I love them). These 3 layer lemon cheesecake bars are super easy to make and simply divine. They have a light zippy flavor thanks to the fresh lemon, melded with that classic cheesecake that we all love. They are light on your pallet and your stomach and you will find yourself reaching for more. One bar just isnt enough.

I prefer these lemon cheesecake bars way more than classic Lemon bars which tend to be more tart and gooey. It only takes about 15 minutes to make and then 25 minutes to bake. This recipe is for a standard 9x13 baking pan. However if you double the recipe it fits the large cookie baking sheets (which is what I usually make since they are soo popular.

Lemon cheesecake bars are the perfect marriage between lemon and cheesecake. Warning: This treat has been found to be highly addicting!

Prep Time 20 minutes
Bake Time 25 minutes
Total Time 45 minutes

Ingredients

  • 1 Pkg. Super moist Lemon cake mix
  • ⅓ Cup Butter (softened) 
  • 3 Eggs
  • 1- 8 oz. Pkg. Cream cheese (softened)
  • 1 Cup Powder sugar
  • 2 teaspoons Grated lemon peel
  • 2 Tablespoons Lemon Juice

Instructions

    1. Blend together the cake mix, (softened) butter, and 1 egg.
    2. Press in ungreased 13 x 9 pan.
    3. Beat cream cheese until smooth.
    4. Gradually blend in powder sugar. Stir in lemon peel and lemon juice until smooth.
    5. **Reserve ½ cup of this mixture and refrigerate it.
    6. Beat 2 eggs into the remaining cream cheese mixture.
    7. Spread over cake mixture.
    8. Bake until set, at 350° for about 25 minutes.
    9. Cool completely,
    10. Spread chilled cream cheese mixture onto cooled cheesecake bars.
    11. Refrigerate until firm.
    12. Cut into bars.

Lemon Cheesecake bars are great served warm, cooled or frozen (which is honestly my favorite way to enjoy them). Yeah, when I make these, I alsways make more than I need so I can store the rest in the freezer to enjoy over several days.
