Super Moist Pumpkin Walnut Bread!

Pumpkin Walnut Bread is the perfect treat because it is both good for you and delicious!

I love sweet breads. They are like my kryptonite. Put them in front of me and I just can't stop eating. Well, as long as they are well made (nothing is worse than dry or hard bread). My favorite two kinds of sweet bread are Lemon Poppyseed Bread (get the recipe here) and Pumpkin walnut bread. This Pumpkin bread is my dad's special recipe. On many a Fall and Winter afternoon or evening, our home is filled with the amazing smell of Pumpkin and spice. 

If you are allergic to walnuts or really can't stand them you can just leave that ingredient out, but personally, I think they really add to the whole pumpkin bread experience.  Seriously just try it. You won't regret it!

Looking for a pumpkin bread recipe that is as delicious as it smells? This recipe is seriously the BEST I have ever had. It is seriously addicting!

Total Time 1 hour 30 minutes

Ingredients

  • 2 Eggs
  • 1 ½ Cup Sugar
  • ½ Cup Oil
  • 1 Cup Pumpkin (plain)
  • 1 ½ Cup Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoon Baking powder
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • ½ teaspoon cloves
  • ¾ teaspoon salt
  • ⅕ cup chopped walnuts

Instructions

Combine eggs, pumpkin, sugar, and oil in mixing bowl

in small cup thoroughly mix together all the spices before adding to the pumpkin mixture.

Add flour slowly into the mix.

(Optional) Add chopped walnuts to the mixture

Pour into bread pans. (*You don't have to grease if the pans are nonstick or stoneware)

Bake at 325

 

At our home we always triple this recipe which gives 6 mini and 1 large loaf of pumpkin bread. Otherwise, the bread seems to dissapear before it even has time to cool. My husband, dad, and sister like to eat it smeared with butter, but the rest of us just love to savor it plain. It is that good.
