Looking for a good Pork & Beans Recipe that is quick, easy and delicious?

I do enjoy pork and beans (especially during the colder seasons. Growing up my mother had a delicious pork and beans recipe that she would bake in the oven in a special cookware reserved just for that dish. When I got married I discovered that my father in law had a similar recipe. However, while both recipes were delicious they both took a bunch of time that to make. Time, that most days as a busy homeschooling work at home mom of 3 I often just didn't have.

So, I started experimenting in the kitchen to try and see if there was a quick and easy alternative for this dish. I am happy to say that I have totally found one that has been heartily approved by all who have tried.

A quick and easy version of a classic American dish. Perfect for those colder days when a hearty meal is appreciated. 

Ingredients

  • 2 Cans Pork and Beans I prefer Van Camps brand
  • 1 Medium Onion
  • 1 12oz Package of Bacon
  • Salt

Instructions

  1. Using a knife or kitchen shears cut up bacon into squares (about 1 inch in size
  2. Cook up bacon in a skillet on Medium High
  3. Dice the onion into small pieces and add to the skillet with bacon and saute till onions are transparent.
  4. In a pot combine both cans of pork and beans with the onions and bacon from the skillet and cook on medium heat for 5-7  minutes 
  5. Salt according to taste

You can serve this as a side dish at a party or as a main dish for those quiet nights is when it gets chilly outside. The flavors are rich and savory in the simple yet hearty dish.
