Years ago, when living in Greece with my family, I was introduced to the incredible world of meat pies made with phyllo dough. The savory meat pie encased in crispy layers of phyllo was so delicious that it left a lasting impression on me. Since returning to the US, I have missed those delightful meat pies and decided to recreate them at home.
Thankfully, phyllo dough is readily available in most grocery stores (look in the freezer section), sparing me the trouble of making it from scratch. For my version, I decided to take a different route with the filling. Instead of the traditional minced meat filling made with ground beef (which I found less appetizing), I opted for pork sausage.
Rather than following the traditional Greek method of layering phyllo dough and meat repeatedly, I chose the Egyptian Goulash style. This involves layering phyllo dough at the bottom of a baking pan, adding the meat filling in one go, covering it with more phyllo dough, slicing the pie into squares, and pouring a milk/egg mixture over the top. This mixture seeps into the cuts, binding the dish together beautifully.
The result was even better than the original meat pies we enjoyed in Greece, and I’m excited to share it with you. This dish is packed with savory flavor and is surprisingly easy to make, with the trickiest part being handling the delicate phyllo dough. (at the end of the recipe I will include some tips for working with Phyllo dough for the best results.
Sausage Phyllo Meat Pie (Egyptian Goulash Style)
Ingredients
- Phyllo dough (1 roll of sheets)
- Olive oil
- 2 lbs mild sausage
- 5 garlic cloves, minced (about 3 Tablespoons)
- 1 medium onion, diced
- 1 egg
- 1 cup milk
- Salt & pepper to taste
- ⅔ cup shredded mozzarella cheese
Instructions
Prepare the phyllo layers:
- Layer half the roll of phyllo dough on the bottom of a 9x13 pan, brushing each layer with olive oil (use 2 sheets per layer, folding the excess into the sides for about 4-5 layers).
Cook the sausage mixture:
- In a pan, cook the sausage, garlic, and diced onion until the sausage is fully cooked and the onion is translucent. Crumble the sausage into small pieces as it cooks.
Assemble the pie:
- Drain excess grease and then spread the cooked sausage mixture evenly in the 9x13 pan.
- Sprinkle the shredded mozzarella cheese over the sausage mixture.
- Layer the remaining phyllo dough on top of the sausage mixture, brushing olive oil between each layer and on the top of the final layer.
Cut and pour:
- Use a sharp knife to cut the meat pie into 12-16 equal-sized sections.
- Mix the egg and milk together, adding salt and pepper to taste, and pour the mixture over the meat pie, allowing it to seep into the cut sections.
Bake:
- Bake in the oven at 350°F for 45-60 minutes, until golden brown.

Tips for Working with Phyllo Dough:
- Keep it moist: Use a damp clean dish cloth to cover the unrolled sheets to prevent them from drying out.
- Handle with care: The sheets are paper-thin and tear easily, so be gentle.
