Triple Chocolate Peppermint Cookies

These Triple Chocolate Peppermint Cookies are so good they are sure to be a family favorite!

I grew up in a home where we love baking cookies. Most often when we make cookies we used one of our tried and true family recipes like these Sour Cream Sugar cookies or Soft Gingerbread cookies. However, sometimes I get the desire to experiment with new recipes which is how I came up with these Triple Chocolate Peppermint Cookies which are perfect for the Christmas season. For while chocolate cookies are delicious. However, Triple Chocolate Peppermint Cookies are even better!

These cookies are soft on the inside, with a bit of a crunch on the outside and the peppermint really compliments the chocolate of the base cookie.

Yield: 2-4 dozen cookies

Ingredients

  • 1 cup unsweetened cocoa powder
  • 2 cup white granulated sugar
  • 1 cup melted butter
  • 6 tablespoons vegetable oil
  • 2 egg
  • 4 teaspoons pure vanilla extract
  • 2 ⅔ cups all purpose flour (or plain flour)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ⅔ cup semi sweet chocolate chips
  • 1 cup white chocolate melting chips
  • ¼ cup crushed peppermint candy

Instructions

  1. Combine flour, soda & salt in a bowl (mix) and set aside.
  2. In a large bowl or mixer combine cocoa powder, sugar, melted butter, and oil until fully combined.
  3. Add in eggs and vanilla and beat until fully combined together.
  4. Add in flour mixture and mix until the dough forms (make sure you don't over mix)
  5. Gently mix in the chocolate chips by hand.
  6. Scoop the dough onto lined cookie sheets (1-2 tablespoon-sized balls according to the desired side)
  7. Use a cup to gently press balls to the desired thickness.
  8. Cook 10 - 11 minutes at 350°
  9. Carefully remove cooked cookies from the cookie sheet to a cooling rack.
  10. Melt white chocolate and drizzle over cookies on a cooling rack.
  11. Sprinkle crushed peppermint candies over drizzle chocolate before it cools and hardens.
  12. Let cool and enjoy!

Notes

  • Make sure you don't overcook the cookies or they will dry out.
  • The cookies are really soft when they first come out f the oven but firm up as they cool, so be careful when moving them from the cookie sheet to the cooling rack.
  • If you don't have a double boiler to melt the chocolate in a pan you can melt the chocolate in a plastic bowlusing your microwave. If you are melting in the microwave do so in 20-30 intervals string in between to make sure you don't burn the chocolate.
  • Place extra parchment paper under the cooling rack to make cleanup easier after drizzling melted white chocolate over the cookies.

My daughter says that these cookies taste like Peppermint Hot Cocoa in cookie form. They really are so good and would go great with a glass of milk or a mug of your favorite Cocoa.
