Soft Gingerbread Cookies

Nothing says it's Christmas time like fresh baked Gingerbread Cookies.

However, not all gingerbread cookies are the same. I am of the strict belief that while gingerbread houses need to be uber hard, gingerbread cookies should be soft and melt in your mouth.

These are the best soft gingerbread cookies you will ever try. They are flavorful and absolutely melt in your mouth as gingerbread cookies should. 

Prep Time 15 minutes
Cook Time 7 minutes
Total Time 22 minutes

Ingredients

  • 1 ½ Cups White Sugar
  • 1 Cup Butter
  • 3 Tablespoons Molasses
  • 2 Tablespoons Milk
  • 1 Egg
  • 3 ¼ Cup Flour
  • 2 teaspoons Soda
  • 2 teaspoons Cinnamon
  • 1 ½ teaspoons Ginger
  • ½ teaspoon Salt

Instructions

    1. Cream the Butter and Suger together until smooth
    2. Mix in the Milk, Egg, and Molasses and mix well
    3. Mix in the spices (Soda, Cinnamon, Ginger, and Salt) 
    4. Slowly mix in the Flour 
    5. Roll out ⅓ of the cookie dough at a time to ⅛ an inch on a floured surface. 
    6. Cut them using your favorite Cookie Cutters and place on a cookie sheet 1 inch apart (I like to line my cookie sheet with parchment paper for better cooking and cleaning) 
    7. Bake at 350 for 7-10 MInutes (I usually find that 8 minutes are perfect) 
    8. Remove from cookie sheet right away and place on cooling rack finish cooling.

This recipe is one I have been making since I was a child. Each time I make it I am reminded of making them with my mother and siblings. I don't know if I had more enjoyment making them, frosting them, or actually eating them.  I don't think things have changed too much other than the fact that now I make them with my own children.  Oh, and while I enjoy frosting cookies I actually prefer these plain. Yes, they are that great.

The other great thing about making these cookies (other than how easy they are and ohh so good) is the amazing smells that fill your home as they bake. It smells like an old-fashioned Christmas.

I have made these cookies twice so far this year and my husband and children are already begging for me to make them again.  Maybe this time I'll make a double batch so they last more than one day.  Ok, make that a triple batch. I only got two cookies from the last batch.

  2. Definitely I gonna try this recipe. Could I use this recipe for a gingerbread house or just for cookies?

    1. This recipe is for soft gingerbread cookies it would not work well for a gingerbread house which needs to be hard for structural support. If you search gingerbread house on this site I have an excellent gingerbread house recipe I recommend.
