How to make a Perfect Chocolate Covered Strawberry

Do you love a good Chocolate Covered Strawberry?

I have always loved berries (especially Strawberries and Raspberries.  Being a girl I also adore chocolate. So, of course, Chocolate covered berries are the best of both worlds (when done right).  Every year for Valentine's Day and other special occasions I like to make both Chocolates covered raspberry clusters (get the recipe here), as well as Chocolate, covered Strawberries. 

I love how easy it is to make these decadent treats. They aren't even expensive if you can get the berries on sale.  (which I normally try to do) .

Ingredients

  • 2 (1 lb Containers) Fresh Strawberries
  • 10 oz Chocolate Melting Wafers

Instructions

    1. Rinse all the strawberries
    2. Thoroughly Dry all the strawberries 
    3. Pour chocolate wafers into a PLASTIC BOWL and slowly melt in Microwave (30 seconds for the first time and then in 10 second intervals stirring in-between until completely melted. 
    4. Using the green leafy part of the strawberry dip the strawberry into the melted chocolate and turn until the full berry is coated. 
    5. Place chocolate-coated strawberry on a sheet of tinfoil to cool and harden

A few notes for this Recipe:

  • You want to use firm fresh Strawberries. You don't want to use wilting, squishy ones they will go bad too quickly.
  • It is very important to make sure you get the strawberries completely dry after rinsing them. This will help the chocolate to stick to the strawberry better and help them to last longer.
  • Use REAL Chocolate (not fake chocolate flavored candy coating) trust me you can taste the difference and it is not that much more expensive.  I prefer to use chocolate melting wafers because they have already been tempered so you don't have to add anything to the chocolate when you melt it (and you get the perfect hard glossy finish for your chocolate berries).
  • Melt the chocolate slowly. Chocolate can burn really easily when heating too fast or at too high a temperature. When chocolate burns it becomes grainy and disgustingly bitter. If you choose to melt the chocolate on the stove then use a double boiler and melt it on medium heat. If you use the microwave then use a plastic bowl (which helps control the temp) and then heat it first for 30 seconds then if needed in 10-second intervals stirring in between until completely melted.
  • When dipping the strawberries you can either hold on to the leaves at the top or poke in a toothpick in the top to hold onto

After the strawberries are dipped in Chocolate and cooling on the foil sheet that is the time if you want to decorate them to do so. You can use sprinkle. drizzle white chocolate, add chocolate chips etc. Personally, I prefer them plain.

  • Chocolate covered berries don't have a long shelf life. for the best experience eat them right away. After several hours the strawberry will start to get juicy on the bottom (though they will still taste good.) I recommend if at all possible eating them within 24 hours for the best experience.
