Pink Lemonade Pie Recipe

Pink Lemonade Pie is one of my favorite desserts. It is actually the dessert that I have for my birthday every year (even though my birthday month is in November.) instead of a traditional cake.

Yes, it is just that good. This easy to make dessert, unlike many other desserts, is light on the stomach. I love how Pink Lemonade Pie presents the perfect balance between sweet and tart. This is probably why it is so rare to ever have leftovers.

Pink Lemonade Pie

Pink Lemon Pie is the perfect cool refreshing treat. This Ice Cream dessert combines both tart and sweet in a way that is quite addicting.

Prep Time 30 minutes
Cook Time 5 minutes
Freeze Time 3 hours
Total Time 3 hours 35 minutes

Ingredients

Pie Filling

  • 1/2 gallon carton vanilla ice cream
  • 6 oz can pink lemonade concentrate

Graham Cracker Crust

  • 14 Full sized graham crackers
  • ½ cup sugar
  • 1 tablespoon flour
  • ¾ teaspoon cinnamon
  • ½ cup butter (one stick)

Instructions

Graham Cracker Crust:

Crunch the graham crackers and mix the crust ingredients. Set aside 1/2 cup of the crust mixture, then press the remaining amount into a 9 x 13 pan. Cook at 350 for 5 minutes, then cool.

 

Pink Lemonade Filling:

Mix the Ice cream (ideally softened) and Pink Lemonade concentrate together (via hand mixer) and then spread over cooled crust. Lastly, sprinkle the 1/3 cup crust mixture over the top and chill in your freezer for a few hours.

 

I honestly love this dessert so much I like to make a double batch just so I can hide the second one in the freezer in order to snack on it for days afterward whenever I get the hankering for a cool zippy treat.

Oh my goodness, this sounds divine. I know what our treat will be this weekend!

You put a ? by the crust temperature. Do you just use the brownness to determine if it is done or is there another indicator you look for? Thanks

Sheryl thanks for catching the typo. I was holding my son while typing the recipe. It was suppose to say 350 for 5 minutes. I fixed the recipe.

You really should. I have found it is light on the stomach due to the lemon, and very tasty.
